Is someone's character not distinguished by what they do? How can you know the person's character if you don't know what they do for instance?

Well when someone is trying to impress, what they do is very forced. You're right in the sense that what people do defines their character, but if they're natural about it then they're not trying to "do" anything. Through this naturalness is where I find the character. I do see where you're coming from, though. Does this answer your question?
